Goat Cheese Salad
I was in Chicago at a recruitment summit for work, and we ate at this wonderful restaurant whose name completely escapes me now. I had this delicious salad and have been recreating ever since. I vary the fruit every time, depending on what’s in season or what I happen to have on hand. The original salad was made with strawberries. Probably the best variation I’ve come up with was when Trader Joe’s had their cranberry covered goat cheese in stock in December. I paired that with some delicious green apples. The tart from the apples blended perfectly with the rich, creamy goat cheese. Just thinking about it makes my mouth water.
ingredients
- Salad:
- 1 bag of mixed spring greens
- 1 package goat cheese
- fresh strawberries, washed and sliced
- granola (I prefer Mona’s brand but any brand that includes nuts and raisins makes it even better)
- Dressing:
- extra virgin olive oil
- red wine vinegar
- 1 T. sugar
- 1/4 t. dry mustard
- water

Layer salad ingredients on top of lettuce. Toss with dressing and serve.

I don’t have exact dressing measurements because I generally eyeball it. The Good Seasonings dressing shaker works very well as a guide.
