ingredients

  • 4 large eggs
  • 4 large eggs , whites only
  • 1/2 C cottage cheese
  • 1/2 C old-fashioned rolled oats, quick cooking, uncooked
  • 1/4 C wheat germ
  • 1/4 C flax seeds
  • 1 tsp baking powder
  • 1 tbsp canola oil
  • 1 tsp cinnamon
  • olive oil cooking spray
  • 1 C strawberries, hulled and sliced
  • 1/2 C maple syrup

    [1] Combine eggs, egg whites, cottage cheese, oats, wheat germ, flax seeds, baking powder, oil and cinnamon and lightly blend with a mixer. Heat griddle or large skillet over medium heat and spray with cooking spray. Ladle mixture by 1/4 cup-ful and cook until both sides are browned.
