Power Pancakes
ingredients
- 4 large eggs
- 4 large eggs , whites only
- 1/2 C cottage cheese
- 1/2 C old-fashioned rolled oats, quick cooking, uncooked
- 1/4 C wheat germ
- 1/4 C flax seeds
- 1 tsp baking powder
- 1 tbsp canola oil
- 1 tsp cinnamon
- olive oil cooking spray
- 1 C strawberries, hulled and sliced
- 1/2 C maple syrup

[1] Combine eggs, egg whites, cottage cheese, oats, wheat germ, flax seeds, baking powder, oil and cinnamon and lightly blend with a mixer. Heat griddle or large skillet over medium heat and spray with cooking spray. Ladle mixture by 1/4 cup-ful and cook until both sides are browned.

[2] Top pancakes with strawberries and drizzle with syrup and serve
