ingredients

  • 1/2 pound ground beef (Can use Italian sausage)
  • 1 clove garlic, crushed
  • 1/4 cup chopped onion
  • 1 cup cottage cheese (8 oz.) Can substitute ricotta cheese
  • 6 oz. shredded mozzarella cheese
  • 1/2 tsp. salt
  • 1/2 cup mayonnaise
  • 8 manicotti, cooked al dente and drained
  • 1 jar spaghetti sauce (16 oz.)
  • 1/2 tsp. dried oregano
  • 1/3 cup grated parmesan cheese for top

    Brown ground beef with onion. Mix cheeses, cooked ground beef, garlic, salt, and mayonnaise. Fill each manicotti. Place in a single layer in a 10 x 6 inch baking dish that has a small amount of sauce spread thinly on the bottom. Cover with any remaining filling. Cover with sauce. Sprinkle with parmesan cheese. Cover with foil. Bake at 325 for 20 minutes. Remove foil and bake 10 minutes. Serves 4.

    To double recipe increase ground meat to 3/4 pound. Leave mayo at 1/2 cup and add 1 beaten egg. Increase pan size to 9 x 13 and increase baking time to 45-55 minutes.
