Matzo Ball Soup
ingredients
- Matzo Balls:
- 1 C matzo meal
- 4 tbsp chicken fat
- 4 eggs
- 1 tsp salt
- 2 tsp parsley, chopped
- Soup:
- water
- 4 tsp dill
- 1/2 bundle chopped parsley leaves
- 1 parsnip
- 4 carrots
- 5 stocks of celery
- 2 onions
- 2 chickens
- salt and pepper

Matzo Balls:

Beat eggs well, add fat, matzo meal, salt and parsley.

Mix together.

Refrigerate several hours.

Roll into small balls.

Cook in soup for 15 minutes.

Simmer all ingredients together overnight or for at least 8 hours.

Add 2 tablespoons kosher wine.
