Dressing - Corn Bread
This recipe was from my wonderful Mother in Law, Eolian Dixon, and I still make it every Thanksgiving and Christmas. I make this up on the day before and refrigerate it before I do the final baking of 1 hour
ingredients
- Corn Bread
- 1 C corn meal
- 1/2 tsp salt
- 2 tsp baking powder
- 1 C milk
- 1 egg, beaten
- Dressing
- 2 slices bread, soaked in chicken broth
- 1/2 C onion, chopped
- 1/2 C parsley, chopped
- 1/2 C celery, chopped
- 1/4 C bell pepper, chopped
- 2 raw eggs
- 2 boiled eggs
- red pepper to taste
- salt to taste
- cooked Giblets and chicken parts, chopped

Mix and bake corn bread and bake for 30 min at 350 deg

Saute vegetables in oleo; add to crumbled corn bread, chopped giblets, chicken, bread, eggs and seasoning. (If necessary, add chicken broth to moisten) Bake for 1 hour at 350 Deg.
