Lemon Curd Trifle with Fresh Berries
ingredients
- 7 Large Eggs Yolks
- 2 Large Eggs - whole egg
- 1 C. Sugar plus 1 T.
- 3/4 C. Lemon Juice - approx 5 lemons
- 1/4 C. Lemon Zest
- 4 T. Butter - cut into cubes
- 3 T. Heavy Cream
- 1 pint Fresh Strawberries
- 1 pint Fresh Blueberries
- 1 pint Fresh Blackberries
- 1 C. Sweetened Whipped Cream
- 1 Prepared Lemon Pound Cake
- 1/4 C. Lemoncello or Grand Marnier
- Fresh Mint Leaves - Garnish

I have not always used Lemon Pound Cake. Ladies Finger cookies make for a nice change. Drizzle a little liqueur on the cookies. Then layer them around the side of your bowl. With the crud and berries layered inside.
