Marinated Cold Shrimp
ingredients
- 2 lbs cooked medium shrimp, peeled and deveined
- 1 medium red onion, sliced and separated into rings
- 2 medium lemons, cut into slices
- 1 c. pitted ripe olives, drained
- 1/2 c. olive oil
- 1/3 c. minced fresh parsley
- 3 T. lemon juice
- 3 T. red wine vinegar
- 1 garlic clove, minced
- 1 bay leaf
- 1 T. minced fresh basil or 1 t. dried basil
- 1 t. salt
- 1 t. ground mustard
- 1/4 t. pepper
directions
In a large glass serving bowl, combine the shrimp, onion, lemons, and olives. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over shrimp mixture and stir gently to coat. Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf before serving.
