Daiquiri Cheesecake
If you don’t have lemon or lime, try adding a package of daiquiri mix to the batter.
ingredients
- Basic Graham Cracker Crust
- 1 package unflavored gelatin
- 1/2 cup sugar
- 1/3 cup light rum
- 1/2 cup lime juice
- 1 tsp grated lime rind
- 1 tsp grated lemon rind
- 4 large eggs, separated
- 1 lb cream cheese, room temperture
- 1/2 cup confectioners’ sugar
- 1 cup heavy cream

Make crust in a greased 9-10 inch spring form pan. Freeze for 10-15 minutes or bake in a 350 oven for 10 minutes

In a medium pan, combine gelatin, sugar rum and lime juice. Stir in rinds, then add yolks, thoroughly mixing all ingredients. Cook mixture over medium heat, stirring constantly until it thickens, remove from heat and cool.

In a large bowl, beat cream cheese until light and smooth.

Add gelatin mixture to cream cheese and mix.

Beat egg whites until they form soft peaks, then slowly add confectioners sugar and continue beating until stiff peaks form. Fold whites into cheese mixture.

Whip cream until stiff, then fold into cheese mixture.

Pour mixture into prepared crust and chill for at least 4 hours.

Decorate cake with sugar dipped limes and lemons (optional)
