Mama Mary's "No Vampire" Salsa
ingredients
- 16 oz white corn, drained (canned or frozen)
- 2 - 2 1/4 oz cans sliced ripe olives, drained
- 1 red pepper, chopped
- 1 small onion, chopped
- 5 minced garlic cloves
- 1/3 cup light olive oil
- 1/4 cup lemon or lime juice (I use Realemon)
- 3 T clear vinegar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 diced ripe avocados

Mix & marinate all ingredients, excpet the avocados, overnight.

Just before serving, add avocados; serve with tortilla chips.
