Caribbean Chicken Sandwiches with Pineapple Salsa

ingredients
Pineapple Salsa- 1 Pineapple cored and peeled rough chopped
- 1 red onion rough chopped
- 1 red pepper rough chopped
- 1 jalapeño rough chopped
- 4 cloves of garlic
- 1 top of one bunch cilantro (1/2-1 cup)
- 6 - 8 chicken breast pounded thin
- 1 bottle KC Masterpiece Honey Teriyaki Marinade
- 6 - 8 slices pepper jack cheese
- 6 - 8 onion or Hawiian hamburger buns
- 6 - 8 TBSP’s of olive oil mayo
- Pineapple salsa
- Green leaf lettuce

Place all ingredients in small batches for salsa into food processor and pulse until finely chopped. Scrape into bowl and refrigerate.

Marinate chicken for 1-8 hours in Honey Teriyaki. Toast buns in oven or on grill until slightly golden. On medium heated grill, grill chicken for 8-12 minutes or until juices run clear top with a slice of pepper Jack cheese cook another 1-2 minutes or until cheese is melted. . Spread one tablespoon of mayo on bottom bun, place a leaf of lettuce then chicken breast top with pineapple Salsa and top bun. Eat and enjoy. This recipe is excellent with roasted red potatoes or roasted sweet potatoes sprinkled with cinnamon, sugar and cayenne pepper.
