Frank's Enchilada Pie

ingredients

  • Corn tortillas
  • 1 lb cooked ground beef or
  • 1 lb prepared chicken
  • 1/2-1/4 green pepper-chopped
  • 1/2-1/4 onion-chipped
  • Chili powder
  • Garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 cups Mexican blend 3 cheese
  • Black olives chopped
  • 1 can enchilada sauce

    Preheat oven to 350

    If using chicken, boil in chili powder, garlic, salt and pepper, Drain and cut into small squares.

    If using beef, add chili powder, garlic powder salt and better when browning. Drain.

    Quickly saute onion and green pepper in 1 t. oil. Combine with chicken or beef.

    Spay 9 inch pie dish or casserole with non-stick spray.

    Line the 9 inch deep pie dish or casserole with corn tortillas, Be sure to line sides.

    Pour small amount of enchilad sauce over tortillas in casserole dish. Layer meat, cheese, black olives. Place one layer of tortillas on top. Repeat beginning with enchilada sauce. Top with enchilada sauce and cheese.

    Bake 25 minutes.

  • 9

    Serve with chopped tomatoes and sour cream.
