Pecan Rolls
Mom’s famous pecan rolls
ingredients
- DOUGH
- 1 pkg. yeast
- 1/4 c. warm water
- 1 T. sugar
- 3/4 c. milk
- 1/3 c. sugar
- 1/4 c. butter
- 4 c. flour
- 1/2 t. salt
- 2 eggs
- FILLING
- melted butter
- 1/3 c. brown sugar
- 1/3 c. white sugar
- 1 1/2 t. cinnamon
- TOPPING
- 3 T. butter
- 3/4 c. corn syrup
- 1 c. brown sugar
- 1 1/2 c. pecans
directions
Dissolve yeast in 1/4 c. water and 1 T. sugar. Set aside. Heat milk, and pour into mixing bowl with 1/3 c. sugar and 1/4 cup butter. Cool to lukewarm, then beat in 1 c. flour, salt, and yeast mixture. Beat in eggs. And flour until bough can be kneaded - about 3 cups. Knead until smooth. Place in greased bowl. Let rise 2 - 3 hours or until doubled. Roll dough onto floured surface to a 12x15“ rectangle. Brush with melted butter. Sprinkle with cinnamon and sugar mixture. Cut into 1” slices and place in a 9x13" baking pan in which you have put 3 T. butter, corn syrup, and brown sugar. Heat and stir until dissolved. Top with pecans. Let rise 35 minutes. Bake at 375° for 18 - 25 minutes. Let stand about 5 minutes before dumping from pan.
