Confetti Corn Salad
ingredients
- 2 cups fresh corn
- 3/4 cup water
- 14 oz can black beans
- 1/2 bunch green onions, chopped
- 1/2 cup red bell pepper, chopped
- 1 small cucumber, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- DRESSING:
- 1 t red pepper flakes
- 1/4 t ground ginger
- 1/4 t salt
- 2 T oil
- 2 T rice vinegar
- 1 T sesame oil
- 1 T lime juice

Boil corn in water. Drain and cool under running water.

Whisk together Dressing ingredients.

Combine other ingredients with corn.

Pour dressing over salad.
