Hong Kong Rice Cakes
Delicious side for any oriental dish. I like this with sweet and sour chicken!
ingredients
- 1 box (6oz) Chicken Rice-a-Roni
- 1/2 cup green onions, sliced
- 2 eggs, beaten
- 2 T. parsley, chopped
- 1 T. Hoisin sauce
- 1 T. Soy Sauce
- 1 tsp. fresh ginger, grated
- 1 clove garlic, minced
- 2 to 3 T. vegetable oil

Prepare rice according to package directions, omitting butter. Cover and refrigerate 1 hour until completely chilled.

Add remaining ingredients to rice mixture except oil. Mix well.

Heat 1 T. oil in large skillet. Form mixture into rice cakes. Fry 4 rice cakes at a time 3 to 4 minutes on each side until golden brown. Add additional oil to pan as needed.

Serve hot.
