Crackaroni and Cheese
I created this by combining 4 of my favorite mac and cheese recipes. Yes, it’s an obsession! This stuff is addicting (thus the Crack title!)
ingredients
- 1 stick butter
- 6 slices bread, 1/2" cubes
- 5 1/2 cups milk
- 1/2 cup flour
- 2 tsp. salt
- 1/4 tsp. nutmeg
- 1/4 tsp. pepper
- 1/4 tsp. red pepper flake
- 4 1/2 cups (18 oz) cheddar, grated
- 2 cups (8 oz.) Gruyere, grated
- 1 lb. elbow macaroni
- 1 jalapeno, diced
- 1/2 yellow onion, diced
- 3 cloves garlic, minced
- 1/2 cup bread crumbs

Dice jalapeno, if you want it HOT, use seeds and ribs, for mild, only use green part. Saute jalapeno, onion and garlic until soft.

Melt 2 T. butter, toss with bread cubes.

In skillet, melt remaining 6 T. butter. Add flour and stir for 1 minute. Slowly stir in hot milk, whisking to avoid lumps. Cook 8 to 12 minutes.

Stir in salt, nutmeg, pepper, cayenne, 3 cups cheese and 1 1/2 cups Gruyere. Stir til melted. Add onion mixture.

Add cheese sauce to cooked macaroni. Pour into greased casserole dish. Sprinkle with remaining cheeses and bread crumbs.

Bake @ 375° for 30 minutes. Let rest 5 minutes. YUM!
