Traditional Baked Macaroni and Cheese
This is Alton Brown’s recipe. Very good and creamy! I am certainly not going to argue with Alton...so his version of Mac and cheese is in my collection!
ingredients
- 1/2 lb. elbow macaroni
- 3 T. butter
- 3 T. flour
- 1 T. dry mustard
- 3 cups milk
- 1/2 cup yellow onion, diced
- 1/2 tsp. paprika
- 12 oz. sharp cheddar, shredded
- 1 tsp. Kosher salt
- 1/2 tsp. pepper
- Topping:
- 3 T. butter, melted
- 1 cup Panko Bread crumbs

Cook macaroni to al dente.

Melt butter, whisk in flour and mustard for 5 minutes. Stir in milk, onion and paprika. Simmer 10 minutes.

Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper.

Fold in cooked macaroni and pour into greased 2 quart casserole dish. Top with remaining cheese.

Melt butter and toss with Panko crumbs. Top mac and cheese with bread crumbs.

Bake for 30 minutes @ 350°. Let rest 5 minutes. Serve.
