There is a delicious flavor combination that I just love! It seems to have the right combination of sweet, salty, crunchy, spicy and I found just the right place to put it... in wonton cups! They are delicious at any party or just plain any time. The flavor is very exotic and outrageous!

ingredients

  • (2) 12 hole mini or one 24 hole mini muffin pan sprayed with no stick spray
  • 1 package egg roll wrappers regular sized
  • 1 cup lump crab meat diced or 1 cup of baby shrimp
  • 1 cup of mango diced
  • 1/2 cup of red onion diced
  • 1/2 cup of green onion diced
  • 1/2 cup of golden raisins
  • 1/2 cup of red bell pepper diced
  • 1/2 cup of chopped cilantro
  • 3/4 teaspoon minced ginger
  • A couple pinches of cayenne pepper or jerk seasoning to taste
  • Salt and pepper to taste
  • 1 jar of orange marmalade preserves

    Cut egg roll wrappers into 4 squares each until you have 24 squares.

    Press one into each hole in the mini muffin pan to make a little cup. Bake at 350 degrees about ten minutes or until the cup turns lightly golden and crisp. Remove from oven, remove cups from muffin pans and cool.

    Next in bowl, mix all of the ingredients except for the marmalade. Mix thoroughly.

    Next, mix the marmalade with a spoon to smooth it out a little. Add enough of the marmalade to cover the ingredients without drenching them. The amount will depend on how much water you get from the veggies. I usually use about 3/4 of a cup. Make sure the ingredients are mixed well. Chill until ready to use.

    When ready to fill wonton cups, just fill the wonton cup and place on party platter. Garnish with some silk tropical or pretty colored flowers scattered on the platter.

I occasionally like to add some sesame seeds on top of the cup or a little mint. Remember; you only want to add the marmalade to FLAVOR... not drench. Tip: At a party, if the cups are left out for a long period of time, they may become soggy... so
