Leona's Corn Casserole

This recipe is from my step mom’s mother, Lee Conner, who did Christmas like nothing I have ever seen. This was her signature holiday dish.

ingredients

  • 1/4 c butter
  • 3/4 c green peppers cut in large chunks
  • 1 clove of garlic, mashed
  • 1/4 c flour
  • 2/3 c milk
  • Salt & pepper, sweet basil, oregano and sugar to taste
  • 1 c grated cheddar cheese
  • 1 c drained, canned tomatoes
  • 1 1/2 package of frozen corn, thawed
  • 1 pound can of whole onions (drained)

    Melt butter.

  • 2

    Add green peppers.

  • 3

    Add garlic.

  • 4

    Cook gently until pepper is tender.

    Stir in flour.

  • 6

    Add in milk, salt, pepper, sweet basil, oregano and a little sugar to taste.

    Heat to thicken and remove from heat.

    Stir in 1/2 c grated cheddar cheese.

    Add in canned tomatoes. Cook until thick and then put into casserole.

    Add frozen corn, thawed and whole onions.

  • 11

    Sprinkle another 1/2 c grated cheese on top.

    Bake uncovered at 350 degrees for 1 hour.
