Leona's Corn Casserole
This recipe is from my step mom’s mother, Lee Conner, who did Christmas like nothing I have ever seen. This was her signature holiday dish.
ingredients
- 1/4 c butter
- 3/4 c green peppers cut in large chunks
- 1 clove of garlic, mashed
- 1/4 c flour
- 2/3 c milk
- Salt & pepper, sweet basil, oregano and sugar to taste
- 1 c grated cheddar cheese
- 1 c drained, canned tomatoes
- 1 1/2 package of frozen corn, thawed
- 1 pound can of whole onions (drained)

Melt butter.

Add green peppers.

Add garlic.

Cook gently until pepper is tender.

Stir in flour.

Add in milk, salt, pepper, sweet basil, oregano and a little sugar to taste.

Heat to thicken and remove from heat.

Stir in 1/2 c grated cheddar cheese.

Add in canned tomatoes. Cook until thick and then put into casserole.

Add frozen corn, thawed and whole onions.

Sprinkle another 1/2 c grated cheese on top.

Bake uncovered at 350 degrees for 1 hour.
