Honey Spiced Duck Crepes
Home made or pre-packaged crepes filled with succulent and aromatic honey spiced duck. Add the duck alone to the crepe or add any vegetable along with it.
ingredients
- 1 whole duck breast
- water for pan
- 1 cup soy sauce
- 1 tablespoon minced ginger
- 2 cloves garlic, minced
- 1 tablespoon five spice powder
- 20 crepes, home made or pre-packaged
- Marinade:
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 2 tablespoons dry sherry
- 1 teaspoon salt
- 1/2 tablespoon five spice powder
- 1/2 teaspoon sesame oil
- Mixture to add to duck meat:
- 1/2 cup diced mango or papaya
- 1/3 cup dried cherries, re-hydrated
- with a little warm water or sherry
- 4 spring onions, garnish
- 4 red chilies, garnish

1. Fill pot with water. Add soy sauce, ginger, garlic and spice powder. Boil briskly for 2 minute.

2. Add duck and boil briskly for another 2 minutes. Allow duck to cool in pot till warm. Remove duck and drain well.

3. Cut duck into half through center of breast bone. Drain off any excess liquid. Place duck in tray.

4. Mix marinade in bowl. Rub all the marinade well into the skin of duck. Marinade for 2 hours, then bake in oven at 300 Fahrenheit for 30 minute.

5. Slice duck when cool with very sharp knife. Add mango or papaya and re-hydrated dried cherries.

6. Fold crepe diagonally, place duck meat, some diced mango or papaya and some dried cherries into center of crepe. Fold right side of crepe to left and left to the right.

7. Decorate with garnish.

These crepes are absolutely fabulous! Saute' some thinly sliced cabbage in a little Hoisin sauce and oil and add to the duck mixture along with any vegetables you might desire. Out of this world! I also like shredded carrots and green table onions.
