ingredients

  • 4 c. whole milk
  • 3/4 c. sugar
  • 1/2 c. long grain rice
  • 1/2 c. water
  • Dash of salt
  • 2 eggs beaten
  • 1 tsp. vanilla
  • Cinnamon
  • 1/2 c. raisins (optional)

directions

Combine milk, sugar, rice, water, and salt in a heavy 4 qt. saucepan. Bring to boil. Reduce heat and simmer, uncovered, 50 to 60 minutes, until rice is tender and desired consistency. Stir frequently during cooking. Remove from heat stir in eggs and vanilla. Pour into 1 1/2 qt serving dish. Sprinkle with cinnamon. If adding raisins, plump first in hot water for a few minutes; drain well before adding to pudding with eggs and vanilla. Maybe served warm or chilled. Serves six.
