Corned Beef & Cabbage
This became a favorite of my children and hopefully will be carried on to my grandchildren.
ingredients
- 1 corned beef
- 1 seasoning packet
- 6-8 potatoes quartered
- 6-8 carrots cut in large pieces
- 3-4 onions quartered
- 1 head cabbage cut into wedges
- 1/2 cup brown sugar
- mustard

Put corned beef in a pot of water with the seasoning packet included with the meat, make sure water covers the meat.

Bring to a boil and simmer two hours or until the meat is fork tender.

Place meat in a baking dish. Add the vegetable to the pot of liquid that the meat was cooking.

Add 1-2 tablespoons of mustard to the brown sugar to make a sauce. Spread the sauce on the of of the meat and bake at 350 degrees for 30-45 minutes. Continue to add sauce to the top of the meat.

When the meat is cooked and fork tender remove from the oven and let it rest for 10 minutes.

Slice across the grain and serve with the vegetables.
