Citrus Shrimp with Orange Avacado Salsa

ingredients

  • Shrimp Marinade:
  • 1 C orange juice
  • 1/2 C lime juice, fresh
  • 1/4 C olive oil
  • 1 C cilantro, roughly chopped
  • 3 cloves garlic, sliced
  • 1/2 t red pepper flakes
  • 2 lbs. large shrimp
  • Orange Avocado Salsa:
  • 2 avocados, ripe but firm, diced
  • 1 jalapeno, small
  • 1/4 C red onion, fine dice
  • 1/4 C cilantro, chopped
  • 2 oranges, sectioned and chopped
  • Squeeze of lime, to taste

    For Shrimp:

    Combine all ingredients in a non-metal bowl and marinate shrimp 2-6 hours.

    Remove shrimp from marinade, discard marinade. Grill shrimp over hot coals in a grill basket 2-3 minutes, until done. Alternately, you can saute the shrimp or make skewers and then grill.

    Orange Avocado Salsa:

    Combine all ingredients in a bowl. Mix well. Add salt, more lime juice and some orange juice to season with lime juice to taste. Best if made 2 hours in advance for flavors to intensify.

Put one or two shrimp on a short skewer and this dish makes a colorful and flavorful appetizer.
