Mom's Meatloaf
ingredients
- 1 small onion, chopped
- 2 pounds lean ground beef
- 1 cup panko breadcrumbs (or 1 cup cooked quinoa)
- 1 tsp salt
- 1 tsp dry mustard
- 1 tsp Worcestershire sauce
- 1/8 tsp pepper
- 3 tbsp bottled chili sauce
- 2 eggs, lightly beaten
- Ketchup
directions
Put onions in large mixing bowl. Add meat. Sprinkle breadcrumbs, salt, mustard, Worcestershire sauce, pepper, and chili sauce over top. Pour beaten eggs over top. Mix all ingredients. Shape into loaf and place in a 13x9“ baking pan. ”Frost" with ketchup, if desired. Bake at 350 degrees for about 1 hour or until done. Let stand about 10 minutes before serving.
notes
Mom usually adds a little dried basil, dried oregano, and garlic powder. Sometimes she adds finely grated carrots and finely chopped fresh parsley, for color and aroma.
