Loveless Café Blueberry Muffins
ingredients
- 1/2 cup (one stick) salted butter, melted and cooled
- 1 1/4 cup sugar
- 1/4 tsp. salt
- 2 large eggs at room temperature
- 1 tsp. vanilla
- 2-2 1/3 cups unbleached all-purpose flour
- 2 tsp. baking powder
- 1 cup blueberries
- 1/2 cup buttermilk

Preheat oven to 375. Whisk butter, sugar, salt, eggs and vanilla together in a bowl. Sift flour and baking powder over the butter mix. Add berries to flour mix and gently fold a few times. Add buttermilk and gently mix together.

Scoop the dough into paper-lined or well-greased muffin pans. Makes 12 standard muffins. Bake 20-35 minutes, depending on size of muffins (closer to 35 for regular size).
