ingredients

  • 1 pkg. Frozen chopped spinach, thawed and well drained
  • 1/2 c. chopped onion
  • 1/2 t. chopped garlic
  • 1/2 t. parsley
  • 1/2 t. mint
  • 1 T. olive oil
  • 1 egg, beaten lightly
  • 1 c. low fat ricotta cheese
  • 1/2 c. low fat feta cheese
  • salt and pepper
  • 2 T. butter melted and mixed with
  • 2 T. olive oil
  • 8 sheets fillo dough

    Saute onion and garlic in 1 T. olive oil until soft and lightly browned. Stir in parsley and mint. Set aside.

    Beat one egg in a large bowl. Add ricotta and feta and mix well. Add spinach and onion mixture. Salt and pepper generously and mix thoroughly.

    Place two sheets of fillo in a 9X9 inch pan. Brush with butter mixture. Place two more in pan and brush again. Allow the edges of fillo sheets to hang over sides of pan. Spread spinach mixture evenly in pan. Fold fillo in over spinach. Brush with butter. Place two sheets and two sheets again, buttering, and fold edges in over spinach. Lightly score the top as desired.

    Bake at 350 degrees for 35 minutes. Cool for 10 minutes before cutting to serve.

notes

You can also use the spray "I Can't Believe It's Not Butter" instead of butter/oil for Fillo. I use a little of each so it has the real butter flavor.
