PEACH COBBLER
My Granny always made the lattice pattern for her cobblers. If you don’t want to bother, you can roll the dough out and cover the peach mixture with a single sheet. Just make sure you cut in vent slits for steam to escape.
ingredients
- 2 CANS SLICED PEACHES
- 1/3 C. SUGAR
- 1/2 TSP CINNAMON
- 1/4 TSP NUTMEG
- 2 TBSP CORNSTARCH
- 2 CUPS SELF RISING FLOUR
- 1/3 C. OIL
- 1/2 TO 3/4 C MILK
- 1/3 C SUGAR
directions
COMBINE FIRST FIVE INGREDIENTS IN SAUCEPAN. BRING TO BOIL, AND THEN POUR INTO UNGREASED 9X13 PAN. COMBINE FLOUR, OIL, MILK AND 1/3 C SUGAR, BLENDING THOROUGHLY, PLACE ON FLOURED ROLLING PAD, KNEAD UNTIL NO LONGER STICKY. ROLL OUT TO 1/8 TO 1/4 INCH THICK. CUT INTO STRIPS ABOUT 1 INCH WIDE. PLACE OVER PEACH MIXTURE IN A LATTICE PATTERN. BAKE AT 425 FOR 20*25 MINUTES, UNTIL TOP IS LIGHTLY BROWNED.
