Sweet Potato Puff
ingredients
- 2 Medium Sweet Potatoes cooked and peeled (or two medium cans of sweet potatoes)
- 1/2 cup low-fat milk
- 1/3 cup sugar (I use baking splenda)
- 2 eggs
- 2 tablespoons of butter or margarine
- 1/2 teaspoon nutmeg
- 1/2 teaspoon of cinnamon
- 2 tablesppons butter or margarine, melted
- 3/4 cup corn flakes
- 1/4 cup chopped walnuts or pecans
- 1/4 cup firmly packed brown sugar

Directions:

Place potatoes in mixer, mix with flat beater on speed 2 for 30 seconds (flat beater on a Kitchenaid mixer)

Add milk, sugar, eggs, 2 tablespoons of butter, nutmeg, and cinnamon

Turn to speed 4 and beat one minute

Spread mixture on greased 9-inch pie plate.

Bake at 400 degrees for 20 minutes, or until set.
For the topping:
Mix together in mixer on Stir Speed about 15 seconds. Put on hot puff and bake 10 minutes longer.
