Couscous with Corn and Black Beans
ingredients
- 1 1/2 cups water
- 1 cup uncooked couscous
- 1/2 cup chopped fresh parsley
- 1 15 oz. can black beans, rinsed & drained
- 1 10 oz. pkg frozen corn, thawed & drained (I use Trader Joe’s canned corn.)
- 3 tablespoons orange juice
- 2 teaspoons grated lemon rind
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/8 teaspoon ground pepper

1. Bring water to a boil in a medium saucepan, and stir in couscous.

2. Remove from heat; cover and let stand 5 minutes; fluff with a fork

3. Combine couscous, parsley, beans, and corn in a big bowl; toss.

4. Combine orange juice and the rest of remaining ingredients; stir.

5. Add to couscous mixture; toss well.
