Vegetable Stew
ingredients
- 2 large yams or sweet potatoes
- 1 large onion
- 2 crookneck squash
- 2 zucchini
- 1 red pepper
- 15 oz. can diced tomatoes
- 15 oz. can garbanzo beans
- 1 1/2 teaspoon curry powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/4 c. water
- sour cream or plain yogurt for topping

Cut all veggies in 1/2 – 1 inch cubes.

Saute potatoes and onions in olive oil 15 min. or until potatoes are soft when pierced with fork.

Add other veggies and spices. Cook 5 min.

Add tomatoes, garbanzo beans, salt and water. Cook until veggies are tender about 5 or 10 min.

Serve over rice or couscous. Top with sour cream or yogurt. Serve with green salad.
