One of the easiest recipes I have and everyone seems to like it

ingredients

  • Boneless chicken breasts (number varies depending on how many people you are feeding)
  • Olive Oil
  • Lemon Juice
  • Mango Chutney (Major Grey’s is easiest to find)
  • Butter (softened)

directions

  • 1

Marinate the chicken breasts in equal amounts olive oil and lemon juice for at least an hour. (I usually put them in a gallon size zip lock bag to marinate).

  • 2

Mix equal amounts chutney and softened butter (I sometimes use liquid I Can’t Believe It’s Not Butter).1/4 c of each is usually enough for 4 chicken breasts.

  • 3

Grill or bake chicken breasts until done. As soon as they come off the grill, put a T of the chutney mixture. It will melt and become a delicious sauce.
