Mexican Macaroni
ingredients
- 1/2 lb macaroni (~2 c), cooked & drained
- 1 lb ground beef, browned
- 1 medium onion, chopped
- 1/2 c sliced celery
- 1/4 t cumin
- Garlic
- 15 oz dried tomatoes
- Bell peppers
- Zucchini
- Sliced olives
- Kernel corn
- Ortega chilies
- Lean kidney or pinto beans

Brown beef with onion, pepper & celery, then drain.

Mix with veggies & heat through.

Bake in oven @ 350 for 1/2 hour.

Top with cheddar cheese.
