  • 1/2 lb macaroni (~2 c), cooked & drained
  • 1 lb ground beef, browned
  • 1 medium onion, chopped
  • 1/2 c sliced celery
  • 1/4 t cumin
  • Garlic
  • 15 oz dried tomatoes
  • Bell peppers
  • Zucchini
  • Sliced olives
  • Kernel corn
  • Ortega chilies
  • Lean kidney or pinto beans

  • 1

    Brown beef with onion, pepper & celery, then drain.

  • 2

    Mix with veggies & heat through.

  • 3

    Bake in oven @ 350 for 1/2 hour.

  • 4

    Top with cheddar cheese.
