Rama's Strawberry Rhubarb Crumble

You can easily substitute peaches, apples & other berries into this recipe. Enjoy, Rama

ingredients

  • 1 cup brown sugar
  • 3/4 cup oats
  • 1 cup flour
  • 1/2 cup butter
  • 1 tsp. cinnamon
  • 3 cup diced strawberries
  • 3 cup diced rhubarb
  • 1 cup sugar
  • 1 tbsp. cornstarch
  • 1 cup water
  • 1 cup heavy whipping cream or low-fat vanilla ice cream

directions

    Preheat oven to 350

  • 2

    Mix sugar and cornstarch with cut strawberries and rhubarb. Add water as needed (mixture should be slightly goopy/sticky). Pour into 8 inch pie pan

  • 3

    Mix brown sugar, oats, flour, butter and cinnamon until crumbly. Add to top of berry mixture in pie pan

  • 4

    Sprinkle remaining brown sugar mixture over top and bake at 350 degrees for 1 hour

  • 5

    While crumble is baking, whip whipping cream into froth (add as sugar as needed). Or, top crumble with vanilla ice cream instead

  • 6
