Mom's Lentil Soup
Hearty Lentil Soup
ingredients
- 1 Medium Onion
- 2 cloves garlic
- 1 1/2 to 2 tsp oil
- 5 cups water
- 1 ham steak (1 - 1 1/2#)
- 2 bay leaves
- 3 allspice balls
- 3 peppercorns
- 5 celery stalks
- 1 small pack baby carrots
- 1/2 to 2/3 pack of lentils (16 oz bag)
- Black pepper to taste
- Salt to taste (1/4 tsp or so)

Brown onions in the oil in large pan. Add garlic at end of browning to prevent from getting bitter.

Add water and lentils. Let soak over low heat

Add ham(bite sized pieces), bay leaves, allspice and peppercorns to the above.

Cook on low heat for 4 hours.

Add chopped carrots, chopped celery and pepper to taste.

Cook for another 1-2 hours depended on desired softness of veggies.

Can cook more quickly at a higher heat.
