Roast Pork Loin Porchetta-Style
Choose good quality pork with a nice layer of fat.
ingredients
- A 6 pound pork loin roast with fat layer(boneless or with bone in)
- 6 garlic cloves, sliced
- 2 tsp fennel seeds
- 1 Tbs black pepper
- Salt
- Olive oil
- Rosemary sprigs
- Fennel fronds
directions
Insert the garlic slices into the flesh of the pork.Sprinkle the roast with fennel seeds and black pepper.Season the meat generously with salt and drizzle olive oil over it.Strip the leaves from the rosemary,chop roughly,and sprinkle over pork.Massage the seasonings into the roast.Line a roasting pan with rosemary sprigs and fennel fronds.Refrigerate for at least an hour or two, preferably overnight.Bring to room temperature before cooking.Preheat oven to 425 degrees.Roast the loin for an hour,or until the internal temp is 130 degrees.Remove the roast and let rest for at least 15 to 30 minutes.
