Sweet & Sour Pork - Wyoming Style
ingredients
- 3/4 cup lemon juice
- 1/2 cup soy sauce
- 6 Tbsp. honey
- 2 small shallots, finely chopped
- 2 large garlic cloves, halved
- 2 bay leaves, crumbled
- 2 tsp. salt
- 2 tsp. black pepper
- 1 tsp. dry mustard
- 1/2 tsp. ground ginger
- 12 oz. pork tenderloin

Puree first 10 ingredients in a blender. Place pork tenderloins in a large re-sealable plastic bag and add blended marinade. Seal tightly, turning to coat pork with marinade Refrigerate overnight.

Bake for at 350°F for around 45 minutes or until cooked through.

While pork is baking, heat sauce on stove for about 5 minutes. Serve over sliced pork.

If making 2 roasts, check after one hour of baking.
