Best Ever Potao Soup

ingredients

  • 12 bacon pieces of bacon cook and crumbled
  • 2 C. cubed peeled potatoes
  • 2 cans (14 1/2 oz.) chicken broth
  • 2 grated carrots
  • 1/2 C. shopped onions
  • 2 Tbls. parsley flakes
  • 2 tsp. each celery seed, salt,and pepper
  • 6 Tbls. all purpose flour
  • 6 C. milk
  • 16 oz. cubed American cheddar cheese (I use velveeta)
  • 2 green onions- sliced- optional

directions

Cook bacon until crisp, drain. Combine bacon, potatoes, broth, carrots, onion, parsley, celery seed, salt and pepper. Cover and simmer. Cook till potatoes are tender, about 25 min. Combine flour and milk until smooth, add to soup. Bring to a boil. Boil for 2 min. add cheese, stir until cheese it melted in soup is heated through.

I got this recipe from Debbie Donaldson. It is the best potato soup that I have tried. I don't use the onions like it say but I do put some in.
