James' Banana Bread

This is a banana bread recipe that my step son James and I came up with one day when he and his brother John were visiting us. He was six at the time so really loved mashing the bananas up!

ingredients

  • 3 medium sized ripened bananas, mashed
  • 1 Tbsp pure vanilla extract
  • 1/2 C Splenda brown sugar blend
  • 3/4 C. vegetable oil
  • 1/2 C. light sour cream
  • 2 large eggs
  • 1 3/4 C. all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 C walnuts

    Preheat oven to 350 degrees. Spray loaf pan with cooking spray to coat. In small bowl, combine brown sugar blend, oil, sour cream, vanilla and eggs. Stir until combined.

    In medium bowl, combine flour, baking soda, baking powder and salt. Gradually add sugar mixture stirring just until blended. Stir in bananas and walnuts. Pour into pan and bake 40 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes then remove from pan and serve warm or cooled.
