Tofu Sour Cream
Try this healthy topping with potatoes. taco’s and enchilada’s
ingredients
- 1 lb of soft tofu, rinsed and drained
- 1/4 c chopped scallions
- 1 tbls umeboshi vinegar
- 1 tbls fresh lemon juice
- 1/2 tsp salt
- 1 tbls chopped fresh chives
- 2 tbls olive oil
directions

In a blender or food processor, blend together all of the ingredients, except the oil.

While blending, slowly pour oil and blend until smooth. Serve at room temperature or chill and serve later. Topping can be store in fridge for 2-3 days.
