Barbara Kafka's Cappucino Pie

ingredients

  • 1 Pie Crust
  • Crush sugar fudge cookies and mix with melted butter. Press into pie pan.
  • (I use Archway Dutch Cocoa Cookies.)
  • Filling:
  • 4 large eggs – separated – room temperature
  • 5 oz. sugar
  • 3 oz. melted bitter chocolate (Baker’s)
  • 2 tbsp. instant espresso
  • 4 tbsp. dark rum
  • 10 oz. heavy cream – whipped
  • 2 tbsp. vanilla

directions

Separate eggs, use yolks ONLY. Beat them with sugar (whisk or beater). Add melted chocolate and add rum. Mix until thick. Fold in whipped cream (which was whipped and chilled for 20 minutes). Add vanilla. Pour into crust and chill overnight and sprinkle top with espresso before serving.
