Saskatoon Berry Pie

ingredients

  • 1 cup water
  • 1/2 cup finely chopped rhubarb
  • 4 cups saskatoon berries
  • 1 cup sugar
  • 2 tsp. potato starch flour
  • pinch of salt
  • 1 tsp. of lemon juice
  • 1 tbsp. butter

directions

Dice rhubarb fine and cook til soft and mushy in 1 cup water. Add saskatoon berries and bring to boil- simmer 5 min. Mix stach with sugar and salt. Add slowly to berries and cook till thickend. Add the teaspoon of lemon juice and butter. Pour into 9" pie shell and cover with pie dough. Bake 30 minutes in hot over 400°F then reduce heat to 320°F and bake till filling bubbles through holes. Enjoy!!!
