Curried Broccoli Soup
Easy to make, healthy & delicious!
ingredients
- 1 - large onion
- 1 T - curry powder
- 4 T - butter
- 2 chopped garlic cloves
- salt
- pepper
- 1 - large head of broccoli, cut in to florets
- 1 - large potato, cut in to chunks
- 1 - medium pear, cut in to chunks
- 4 - cups of chicken stock
- 1/2 cup of half and half cream
- 1/2 cup green onion
directions

1. melt butter over low heat

2. add curry powder

3. add broccoli, pear & potato, cover and cook for 10 minutes
- 4
4. add stock and cook until vegetables (& pear) become soft
- 5
5. cool slightly then puree in a food processor (in batches)

6. return to pot to slowly reheat adding your half and half cream, plus salt & pepper to taste

This soup is delicious on a cold day. Even kids enjoy this healthy, filling soup.
