Curried Broccoli Soup

Easy to make, healthy & delicious!

ingredients

  • 1 - large onion
  • 1 T - curry powder
  • 4 T - butter
  • 2 chopped garlic cloves
  • salt
  • pepper
  • 1 - large head of broccoli, cut in to florets
  • 1 - large potato, cut in to chunks
  • 1 - medium pear, cut in to chunks
  • 4 - cups of chicken stock
  • 1/2 cup of half and half cream
  • 1/2 cup green onion

    1. melt butter over low heat

  • 2

    2. add curry powder

  • 3

    3. add broccoli, pear & potato, cover and cook for 10 minutes

  • 4

    4. add stock and cook until vegetables (& pear) become soft

  • 5

    5. cool slightly then puree in a food processor (in batches)

  • 6

    6. return to pot to slowly reheat adding your half and half cream, plus salt & pepper to taste

This soup is delicious on a cold day. Even kids enjoy this healthy, filling soup.
