Marinated Chicken Thighs with Shallot and Beet Relish
The relish is really more like a side dish so just add a baguette and a salad and you’ll have a brilliant meal. You can also make this dish using duck breast instead of chicken thighs for a special dinner occasion.
ingredients
CHICKEN:- 1/2 teaspoon grated orange rind
- 3 tablespoons fresh orange juice
- 1 tablespoon soy sauce
- 2 teaspoons honey
- 1 teaspoon ground coriander
- 1 tablespoon minced peeled fresh ginger
- 4 rosemary sprigs
- 1 garlic clove, minced
- 8 boneless chicken thighs
- 14 ounces baby beets or quartered regular beets
- Cooking Spray
- 1 pound (about 15) small shallots, peeled and quartered
- 2 cups chopped sweet onion
- 1/4 cup dry red wine
- 1 cup chicken stock
- 2 tablespoons chopped fresh parsley
- Salt & Pepper

To prepare chicken, combine first 9 ingredients in a zip-top plastic bag. Seal and chill 2 hours turning occasionally. Remove thighs from bag. Reserve marinade; discard rosemary.

To prepare relish, leave root and 1-inch of stem on beets; scrub with a brush. Place in a medium saucepan; cover with water; boil for 30 minutes or until tender. Drain and rinse with cold water. Drain and cool. Trim off beet roots; rub off skins. Coarsely chop beets.

Heat a large nonstick skillet coated with cook spray over medium-high heat. Add shallots; sauté 2 minutes. Add onion; sauté 5 minutes. Stir in reserved marinade and wine; cook 1 minute or until liquid almost completely evaporates. Add stock; cook 6 minutes until liquid almost evaporates. Remove from heat. Stir in beets, and parsley. Season with salt & pepper to taste.

Sprinkle chicken with salt & pepper. Heat a large grill pan coated with cooking spray over medium-high heat. Add chicken and cook 6 -8 minutes per side or until done.

I didn't think i would like this at all when the end result came. But the second i put it in my mouth and tasted the orange and beet i fell in love. When you get completely bored of the same flavor combinations try this and received renewed interest.
