Roasted Vegetables
Easy and delicious!
ingredients
- 1 each med. red and yellow bell peppers, cut into bite sized pieces.
- 1 lb. fresh asparagus.....tips only
- 1 small zucchini and 1 small yellow squash, halved lenghtwise and then sliced crosswise into 1 inch thick pieces
- 1 small red onion thinly sliced and separated into rings
- 1 cup baby carrots
- 3 tbsp. olive oil
- 1 tsp. salt
- 1/2 tsp. pepper
directions
Heat 450 degrees. Put in large roasting pan; toss to mix and coat. Spread in a single layer. Roast for 45 minutes stirring twice, until vegetables are lightly browned and tender.
