Salmon Fettucini
ingredients
- 3/4 lb. salmon
- 1 c. white wine
- 1 c. diced scallions or green onions
- 1 bay leaf
- salt and pepper
- 1 lb. fettucini
- 1/2 c. parmesan cheese
- 1/2 c. cream
- 1c. chopped watercress
directions

In large frying pan with lid, poach salmon in wine with the scallions, bay leaf and salt and pepper.

Simmer for 5 minutes. Remove from heat.

Add parmesan cheese and cream to cooked fettucini. Add salmon and poaching liquid, breaking up salmon.

Top with chopped watercress.
