Cindy's Yummy Cookies

ingredients

  • 2 cups butter
  • 2 cups sugar
  • 2 cups brown sugar, lightly packed
  • 4 eggs
  • 2 tsp vanilla
  • 4 cups flour (wheat - if you have to)
  • 5 cups oatmeal (grind in the blender)
  • 1 tsp salt
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 24 ounces white chocolate chips
  • 2 cups dried cranberries
  • 1 1/2 cups chopped nuts (walnuts or pecans)

    Mix butter, sugar and brown sugar together. Beat eggs and vanilla and add to the butter mixture. Mix the flour, oatmeal, salt, baking powder and baking soda together and combine with the eggs and butter mixture. Mix in the chocolate chips, cranberries and nuts.

    If the mixture is pretty sticky and not firm, refrigerate for 1-2 hours before baking.

    Spoon mixture onto a baking sheet and bake at 375* for 8 minutes. Watch carefully, they should be slightly brown if you like them chewy.

    If you break the cookies up into pieces, no one else will want to eat them and you can have them all for yourself. As well, if broken, there is absolutely no way to accurately monitor exactly how many cookies have been eaten - so no calorie counting.

Of course, unbaked cookie dough does not count as calories either since they are not actually cookies yet. Enjoy!
