French Onion Bread Soup
ingredients
- 2 T. olive oil
- 2 lbs. onions, thinly sliced
- 1 small clove garlic, finely chopped
- 1 t. dried thyme
- 1/2 c. white wine
- 2 c. beef broth
- 1/2 baguette, cut into small cubes
- 2 c. shredded gruyere or swiss cheese

Preheat oven to 450. In a large, heavy saucepan, heat olive oil over med-hi heat. Add onions, garlic, thyme, salt, & pepper. Lower the heat to med. and cook, stirring, until onions are golden, about 15 min. Stir in the wine and cook 3 min. Add broth, reduce heat to low and cover.

Divide half of bread cubes among 4 small ovenproof bowls and cover each with 1/4 c. cheese. Divide soup among bowls, then top with remianing bread and cheese. Set bowls on a baking sheet and bake until cheese is bubbly, about 10 minutes.
