Strawberry Peach Ruhbarb Pie

ingredients

  • Topping:
  • 1/2 Cup Oatmeal
  • 6 tbsp. Sugar
  • 1 1/3 cup Flour
  • 1 Stick butter, Melted
  • 1 Lemon, juice and zest
  • 1 tsp. baking powder
  • Filling:
  • 1 1/2 Peaches, Sliced
  • 1 Carton of Strawberries, Sliced
  • 1 Stalk of fresh Rhubarb, one inch pieces
  • 2/3 cup Sugar
  • 3-4 tbsp. Cornstarch
  • Juice of one lemon
  • 1 Frozen pie crust

    1. In a large bowl, combine ingredients for filling, then pour in pie crust that has been thawing for 5 minutes or so.

    2. In a medium mixing bowl combine topping ingredient and then place on top of the filling.

    3. Cook in the oven at 350 degrees for about 40-50 minutes or when the filling starts to bubble and the topping looks golden brown.

    4. Let cool for 5 minutes and enjoy!
