Strawberry Peach Ruhbarb Pie
ingredients
- Topping:
- 1/2 Cup Oatmeal
- 6 tbsp. Sugar
- 1 1/3 cup Flour
- 1 Stick butter, Melted
- 1 Lemon, juice and zest
- 1 tsp. baking powder
- Filling:
- 1 1/2 Peaches, Sliced
- 1 Carton of Strawberries, Sliced
- 1 Stalk of fresh Rhubarb, one inch pieces
- 2/3 cup Sugar
- 3-4 tbsp. Cornstarch
- Juice of one lemon
- 1 Frozen pie crust

1. In a large bowl, combine ingredients for filling, then pour in pie crust that has been thawing for 5 minutes or so.

2. In a medium mixing bowl combine topping ingredient and then place on top of the filling.

3. Cook in the oven at 350 degrees for about 40-50 minutes or when the filling starts to bubble and the topping looks golden brown.

4. Let cool for 5 minutes and enjoy!
