Zucchini Rice Casserole
Another of Mom’s recipes, it was a favorite of mine and much anticipated once the zucchini was ripe in the summer.
ingredients
- 1 lb. ground beef
- 1 small onion, diced
- 3 c. tomatoes, chunked
- 1 tsp chili powder
- 1/2 uncooked instant rice
- 1 medium zucchini, chunked
- 1/4 lb. Velveeta, chunked
- dash salt and pepper
- 1/2 tsp basil
- dash garlic powder
directions
Brown beef and onion; drain. Add all other ingredients, except cheese, to a large skillet. Simmer on the stove for about 1 hour. Add cheese last, and allow to melt before serving.
notes
Make sure the rice is cooked all the way. Keep adding water if necessary.
