ingredients

  • 5 Eggs, beaten
  • 1 1/8 Cups Oil
  • 2 1/4 Cups Sugar
  • 1 1/2 Tsp. Lemon Peel, grated
  • 3/4 Tsp. Orange Extract
  • 1/2 Tsp. Vanilla Extract
  • 3 Cups Grated Zucchini
  • 3 3/4 Cups Flour
  • 1 1/4 Tsp. Salt
  • 3/4 Tsp. Cinnamon
  • 1/2 Tsp. Pumpkin Pie Spice
  • 1/2 Tsp. Pampered Chef Cinnamon Spice Blend
  • 1 1/2 Tsp. Baking Soda
  • 3 Tsp. Baking Powder
  • 1 Cup Chopped Nuts

    1. Preheat oven to 350°. Combine beaten eggs, oil and sugar. Beat well. Add lemon peel, orange and vanilla extracts and zucchini. Beat well.

    2. In another bowl, combine flour, salt, spices, baking soda and powder. Combine flour mixture with egg mixture. Add nuts, mix well. Pour into 2 greased and floured 9 x 5 inch loaf pans. Bake for 1 hour. Cool in pans for 10-15 minutes. Remove to cooling rack. Serve warm with butter.
