Sultry Sea Scallops
I made these for Nick for Valentine’s Day and it was better (and sexier) than a 5 star restaurant! - Anne
ingredients
- 2 Tbs. Extra Virgin Olive Oil
- 1 1/2 lbs Large Sea Scallops
- 2 c Dry White Wine (better make that 3, but pour that third one in a glass for yourself)
- 1 Tbs. Butter
- 3 or so Cloves of Garlic, minced
- 2 Tbs. Minced Parsley
- Ground Black Pepper
- Lemon Juice to taste

1. Heat oil in skillet.

2. Add scallops once oil starts to smoke. Sear each side for a minute or so until golden brown.

3. Add 1/2 cup of wine and reduce heat.

4. Remove scallops from the pan.

5. Add wine, lemon juice, and garlic. Bring to a boil and reduce heat by half.

6. Add butter, parsley, and ground pepper to taste.

7. Place scallops on a plate and pour sauce over top.
notes
Another variation is to wrap the scallops in prosciutto or bacon (place a tooth pick through it so it stays put) and add extra butter and wine increasing the amount of sauce to serve over pasta.
